Ingredients [Marination]
- Chops: 1 kg
- Lehsan (Garlic) paste: 1 tbs
- Adrak (Ginger) paste: 1 tbs
- Namak (Salt): 1 tsp
- Pissi laal mirchen (Red chilli powder): 1½ tsp
- Haldi (Turmeric powder): ¼ tsp
- Chat masala: 1 tsp
- Dhaniya (Coriander) powder: 1 tsp
- Garm masala (Whole spices) powder: ¼ tsp
- Sirka (Vinegar): 2 tbs
- Worcestershire sauce: 1 tbs
Method
Step 1: Add Chops, Lehsan (Garlic) paste, Adrak (Ginger) paste, Namak (Salt), Pissi laal mirchen (Red chilli powder), Dhaniya (Coriander) powder, Chat masala, Haldi (Turmeric powder), Garm masala (Whole spices) powder, Sirka (Vinegar), Worcestershire sauce in a bowl, give it a good mix and marinate for 2 hours or overnight.
Ingredients [Gravy]
- Oil: ½ cup
- Piyaz (Onion): 2 medium
- Zeera (Cumin seeds): 1 tsp
- Dahi (Yogurt): 1 cup
- Pissi laal mirchen (Red chilli powder): ¾ tsp
- Paprika: ½ tsp
- Namak (Salt): 1 tsp [to taste]
- Pani (Water): 2 glasses
- Sabz dhaniya (Green coriander): 2 tbs
- Sabz mirchen (Green chillies): 3 [whole]
- Lemun ka ras (Lemon juice): 1 tbs
- Garm masala (Whole spices) powder: ¼ tsp
Method
Step 1: Fry Piyaz (Onion) till it becomes pink. Then add Zeera (Cumin seeds), mix, and cook till Piyaz (Onion) becomes brown. Add marinated Chops, mix and cook at medium flame for 3-4 minutes.
Step 2: Add Dahi (Yogurt), mix, and cook at medium flame for 5 minutes.
Step 3: Add Pissi laal mirchen (Red chilli powder), Paprika powder, Namak (Salt), and give it a good mix.
Step 4: Add Pani (Water), mix, cover, and cook at low flame for 40-50 minutes.
Step 5: Add Sabz mirchen (Green chillies), mix, and cook till the required consistency of gravy is obtained.
Step 6: Add Sabz dhaniya (Green coriander), Lemun ka ras (Lemon juice), Garm masala (Whole spices) powder and give it a good mix.
