Chicken Enchiladas

Ingredients [Enchilada sauce preparation]

  • Oil: 3-4 tbs
  • Lehsan (Garlic): 2 cloves [chopped]
  • Piyaz (Onion): 1 medium [chopped]
  • Tamater (Tomatoes): 4 medium [peel and cut in cubes]
  • Pissi laal mirchen (Red chilli powder): 1 tsp
  • Kuti laal mirchen (Red chilli flakes): ¼ tsp
  • Namak (Salt): ¾ tsp [to taste]
  • Pissi kali mirchen (Black pepper powder): ¾ tsp
  • Paprika powder: 1 tsp
  • Oregano: 1 tsp
  • Zeera (Cumin) powder: ½ tsp
  • Sirka (Vinegar): 1 tbs
  • Ketchup: 1 tbs
  • Cheeni (Sugar): 2 tbs
  • Pani (Water): 1 cup

Method

Step 1: Add Lehsan (Garlic) to the Oil, mix and cook at medium to low flame till it becomes light golden. Add Piyaz (Onion), mix and cook till it becomes pink.

Step 2: Add Tamater (Tomatoes), mix, cover and cook at medium to low flame till tomatoes become soft.

Step 3: Add Pissi laal mirchen (Red chilli powder), Kuti laal mirchen (Red chilli flakes), Namak (Salt), Pissi kali mirchen (Black pepper powder), Paprika powder, Oregano, Zeera (Cumin) powder, Sirka (Vinegar), Ketchup, Cheeni (Sugar) and mix for 30-40 seconds.

Step 4: Add Pani (Water), mix, cover and cook at medium to low flame for 3-4 minutes.

Step 5: Add ¼ cup of additional water if required. Cook at low flame for 1 minute. Blend it into a fine paste to make smooth sauce.

Ingredients [Chicken preparation]

  • Chicken: 350 gram [boneless]
  • Namak (Salt): ½ tsp [to taste]
  • Pissi kali mirchen (Black pepper powder): ¼ tsp
  • Pissi laal mirchen (Red chilli powder): ¾ tsp
  • Lehsan (Garlic) paste: 1 tsp
  • Shimla mirch: 1 small [optional]
  • Piyaz (Onion): 1 small [optional]
  • Sirka (Vinegar): 1 tbs
  • Oil: 3-4

Method

Step 1: Add Chicken to the oil, mix and cook at medium flame till it changes its colour. Add Lehsan (Garlic) paste, mix, cover and cook for 30 seconds at medium to low flame.

Step 2: Add Pissi laal mirchen (Red chilli powder), Pissi kali mirchain (Black pepper powder), Namak (Salt), Sirka (Vinegar), mix, cover and cook at low flame till Chicken becomes tender.

Step 3: Add Piyaz (Onion), Shimla mirch (Capsicum) and mix well. Add 5-8 tbs of Enchiladas sauce, mix and cook at medium flame for approximately 1 minute.

Ingredients [assembling]

  • Tortilla: 6
  • Enchiladas sauce
  • Cooked Chicken
  • Cheddar cheese

Method

Step 1: Spread 1-2 tbs of Enchiladas sauce on tortilla. Add 3-4 tbs of Cooked Chicken in the center of tortilla, add Cheese and fold Tortilla like Paratha roll. Do the same with the rest of Tortillas.

Step 2: Add 5-6 tbs of Enchiladas sauce in the base of serving dish. Line Tortilla wraps, Sauce and Cheese [as much as you like]. Finally, garnish with 1-2 tbs of sauce .

Step 3: Preheat the oven at 180° for 5 minutes and bake 20-22 minutes at 180°.
